Oh Potatoes...


Potato and Leek Soup


Ingredients: Your favourite type of potato- about 1 per person-peeled and cubed Bunch of leeks- trimmed and washed- and sliced radially Chicken stock or water Butter or oil Cream-optional Salt and Pepper Chives or Green onion to top if desired Directions: In a heavy bottomed pot, sauté your prepared potatoes and leeks until soft. Do not brown. Add stock or water until just covered Simmer until potatoes are cooked through. Using an immersion blender, puree until smooth. Add cream until desired thickness.

Season and top with chives or green onions.

This soup can be made vegan or totally carnivorous with some bacon sprinkled on top. Both are divine. I like a splash of hot sauce in mine.

So simple to make, and so satisfying. Oh potatoes....
